The Shun Elite 9-1/2" Slicing Knife follows a painstaking production process ensures that no two blades are exactly alike, each one a direct legacy of the ancient Japanese samurai swordsmith tradition. Made by hand, this knife has exceptionally strong blades made of perfectly blended steel. Every knife is handcrafted by skilled artisans and the production process requires over 100 steps from beginning to end. The cutting core of each blade is SG2 stainless steel, which has been perfectly blended to eliminate weak spots or other imperfections. The core is then clad with SUS410, a "softer' stainless steel that adds strength, flexibility, and protection again corrosion. The area where the two steels meet is called the "harmon,' and shows as a beautiful undulating line. Each blade is tempered to a hardness of 64 on the Rockwell scale, compared to just 56 to 58 for most other fine European cutlery. Exceedingly sharp and smooth edges stay sharp several times longer than comparable stainless cutlery. Moisture-resistant black PakkaWood handle is inlaid with samurai crest. Hand wash with mild soap.
